How We Roast

At HiLo Coffee Roasters, roasting is both an art and a science. Every batch is small, intentional, and crafted to highlight the unique character of each origin. We source only specialty-grade beans—grown responsibly, harvested at peak ripeness, and processed to bring out their distinct flavors.

Inside the roastery

Our small-batch philosophy ensures full control over temperature, airflow, and timing. This allows us to respond to the subtle changes in each roast and bring out the best in every bean. From a bright and floral Ethiopian to rich and chocolatey Guatemalan coffee, we tailor each roast to balance sweetness, acidity, and body.

Roasting is more than following a curve—it’s about listening, smelling, and seeing the transformation of the bean. We monitor first crack closely, adjust profiles as needed, and rely on our senses to ensure every batch is roasted to perfection.

Finally, we roast to order. Each bag is packed shortly after roasting so your coffee arrives at peak freshness, delivering a clean, vibrant, and deeply satisfying cup every time.
